If you are a vegetable lover, you must try this new dish!
We ate with some friends the other night and she prepared CORN SALAD. (At least I THINK that is what she called it.)
I just prepared it for supper and I can hardly wait to serve it!
Here are the ingredients:
- 1 small can of Shoepeg corn
- 1 small can of Mexican corn
- 1 bell pepper
- 1 bunch of spring onions
- and a dab of mayonnaise
Drain the juice from the corn. (I doubled the amount of corn in my dish.)
Next, chop up all of your ingredients and mix with the corn.
Add just enough mayo so that each veggie has some on it.
Add salt (pepper if you want) and you are finished!
No cooking — just chopping and mixing.
