After seeing an article about the processed “meat” that fast food restaurants use for chicken nuggets, I decided I had to make some changes around here.

The photo of pink oozy stuff picture here is supposed to be all sorts of chicken parts all mashed together — bones, eyes, guts — you name it.  Sorry, I know I probably made you heave.  I had the same reaction.    The article claims that this is also treated with ammonia to kill the bacteria.  Yuck!   The author of the article also claims that they “dye” this pink concoction to make it a desirable color.

Honestly, would you want to eat another “nugget” of this pink stuff?  Gag!!!

No more purchased nuggets for our child!  That is just disgusting.

What can a Mom do?

I’ll show you!

First, I cut up some chicken.

I took the chicken pieces and dipped them into two eggs that I had whisked in my mixing bowl:

Then I made some bread crumbs by putting 3 slices of whole grain bread in my blender.  I poured them into a shallow pan and rolled the egg covered pieces of chicken.

I seasoned them with salt and pepper, but you could use Italian seasoning or whatever you prefer.   This is what they looked like in the oven.

I baked them at 375 degrees for 25 minutes.

None of that pink mess, but some healthy, organic chicken breasts with whole wheat crumbs.  I even used eggs from our chickens.  You can’t get much fresher than that.

Our Princess enjoyed the nuggets.   They were quick and easy.  If you make your own, let me know how they turn out.
